Baked Avocado and Eggs

Baked Avocado and Eggs

So basically, it  is a breakfast meal full of protein and fiber , hardly it takes 15-20 minutes in preparation.

Ingredients-

  • 2 eggs
  • 30 g cheddar cheese
  • 1 avocado, halved and pitted
  • salt and finely ground black pepper to taste
  • 1 tsp chopped fresh parsley,or to taste (optional)

Preparation-

1- preheat oven to 220 C/ Gas 6

2- Scoop out a little of the avocado from where the stone was to make room for 1 egg.

3- Place on the baking tray and crack 1 egg on the top of each avocado half.

4- Bake in the preheat oven until egg is cooked , 15-20 minutes.

5- Sprinkle cheddar cheese on the top and season with salt and pepper.

6- Garnish with fresh parsley.
