Schezwan Sauce

This sauce is a fusion of Indo-Chinese recipe with lot of dried chili , ginger and garlic. Basically, a spicy dipping sauce for chips and fries.

Ingredients-

  • 2 cup dried red chilies
  • 1/4 cup  water
  • 3 tsp oil
  • 2 tsp ginger (finely chopped)
  • 2 tsp garlic ( finely chopped)
  • 1 tsp soya sauce
  • 1 tsp vinegar
  • 2 tsp crushed black pepper
  • 1 tsp sugar
  • 3 tsp corn flour paste
  • 2 tsp tomato sauce
  • salt to taste

Direction to prepare-

  1. Soak dried red chilies in a hot water until they turn soft.
  2. Drain the water and blend in a blender in a smooth and fine paste.
  3. Take a pan , heat a oil and add ginger , garlic saute it for a  minute.
  4. Add red chili paste mix it well for 2 minutes.
  5. Now add water to adjust the consistency . Let it simmer for 15 minutes.
  6. Now add soya sauce , vinegar , black pepper , sugar corn flour paste , tomato sauce and salt to taste.
  7. Mix all the ingredients well and saute it for 5-6 minutes.
  8. Schzewan sauce is ready to serve as a dipping for snacks.
You can store sauce in a air tight container for 10-15 days.
