Chicken Tikka Masala
Chicken Tikka Masala is a dish of chunks of roasted marinated chicken in a spiced curry sauce. This sauce is creamy and orange in color.Authentic chicken tikka masala is usually made with yogurt marinated chicken.
Ingredient:
- 6 Garlic , cloves
- 4 tsp Ginger (finely grated)
- 4 tsp ground turmeric
- 2 tsp garam masala
- 2 tsp ground coriander
- 2 tsp ground cumin
- 1 1/2 cup yogurt
- salt to taste
- 2 cups heavy cream
- 3 tsp oil
- 1 small onion (diced)
- 1/4 cup tomato paste
- 6 cardamons (crushed)
- 2 dried red chilli
- 2 lb boneless chicken breasts
- 2 boiled tomatoes (peeled).
Preparation-
1- Take a bowl , whisk yogurt and salt. Now add half of garlic , ginger , turmeric , garam masala , coriander powder and cumin in a bowl.
2- Trim chicken breasts or thighs into bite sized pieces.
3- Add trimmed chicken into above mixture and turn to coat in above mixture.
4-Cover & chill 4-6 hrs
5- Heat ghee in a large heavy pot over medium heat
6- Add onion , tomato paste , cardamon and chillies and cook. Stir it until tomato paste has darkened and onion is soft
7- Add remaining half of spices mixture and cook
8- Add tomatoes with juices crushing with you hands as you add them in mixture
9- Bring to a boil , reduce the heat and cook until the sauce thicken . Simmer it for 8-10 minutes
10-Add cream and simmer it until the mixture get creamy. Add salt to taste.
11-Meanwhile, In a large bowl , heat 1 tbsp of oil over medium-high heat.
12- Add the chicken mixture & cook for about 6-7 minutes , until they are cooked through
13-Now add cooked chicken into sauce and simmer , stirring occasionally until chicken mix with the sauce properly.
