Veg Manchurian

Ingredient:-

For the gravy
Onion chopped – 1/2
Capsicum chopped – 1/2
Celery chopped – 1/2 stick
Green chili chopped – 3
Ginger grated – 1 inch
Garlic cloves – 3
Cornstarch –  1 1/2 tbsp dissolved in 3/4 cup of water
Soya sauce – 2 tbsp
Sriracha hot chili sauce – 2 tbsp
Worcestershire sauce – 1 tsp
Vinegar – 1/2 tsp
Black pepper Powder – 1/2 tsp
Water
Vegetable Oil – 1 tbsp
Salt to taste
Spring Onions – to garnish
For Frying Vegetable Balls
Cabbage – 100g
Ginger – 1 inch
Green chili – 3
Onion – 1/2
Carrot – 1
Salt to taste
Garlic cloves – 3
Black peppercorns -8
Bread flour – 1 tbsp
Rice flour – 1 tbsp
Corn Flour – 1 tbsp
Oil for frying

Preparation:- 

For gravy
  • Heat Oil in pan. add onion, green chilli, garlic cloves, ginger and saute till translucent.
  • Add capsicum and celery and saute for another minute
  • Add corn starch dissolved in water, another 1 to 1 1/2 cup of water and mix well.
  • Add soya sauce, chili sauce, Worcestershire sauce, vinegar, black pepper powder, salt to taste and mix well and stir continuously and bring it to boil.
For Vegetable balls
  • Using food processor finely chop cabbage, ginger, green chili, onion, carrot, garlic, peppercorns and transfer it to bowl.
  • Add bread flour, rice flour, corn flour, salt to taste and mix well.
  • Now make balls out of it. Once the Oil in hot add one ball and check that it does not break. 
  • Now add other balls and fry it till golden brown and crisp. (Put the balls in hot oil in high flame, then switch it to medium flame so that its cook inside and now again in high flame remove the balls and put it in paper towel.)
Add this fried balls to the gravy and mix well. garnish it with spring onions. Veg Manchurian is ready. Serve hot and enjoy.
Important tip:
  • Cook the balls in medium flame so that the vegetables inside gets cooked well. The flame should not be low as it will absorb the oil.
  • If you want thick consistency for the gravy add extra teaspoon of corn flour.this gravy thickens when it cools down. You can add water in this case and boil again
