Stuffed Idli

Idli is a south Indian recipe,popular as breakfast food throughout the India and Sri Lanka.Soft Idlis can be made in two ways,one is using rice and other using semolina or rava (suji)

Ingredients-

For Idli-
  • 2 cup semolina
  • 1 cup curd
  • 1 tsp mustard seeds (rai)
  • 10-12 curry leaves
  • 2 tsp oil
  • salt to taste
  • 1 tsp meetha soda.
For Idli Stuffing-
  • 3 medium potatoes
  • 1 cup pea seads
  • 1 1/2 tsp red chili powder
  • 1 1/2 tsp coriander powder
  • a pinch of turmeric salt
  • a pinch of chaat masala
  • 1 tsp oil
  • i tsp ginger & garlic paste
  • salt to taste.

Procedure-

For Idlis-
1- Mix salt and curd in semolina and make a thick batter gradually using water.
2- Leave it for atleast for 1 hour.

For stuffing-
1- Boil potatoes and peas , peel and mash properly.
2- In a large pan,heat oil and add potatoes,peas,salt,turmeric ,red chili,coriander powder and some chaat masala for taste stir it and fry it for a minute.
3- Now in another pan,heat oil and again and crackle mustard seeds and curry leaves in it.
4- Then add meetha soda.
5- Now add stuffing mixture in that apn.
6- Now grease idli mould with oil and put a little of the idli batter.
7- After that,add stuffing mixture,and again put idli mixture to cover the stuffing.
8- Boil 2-4 glasses of water in a pressure cooker & place idli mould in it,cover it and let it whistle.
9- Cook at normal flame for 10-15 minutes &turn off the flame 
10- Serve it with hot sambhar and coconut chutney.
